In our journey to source the best fruit on the planet, we discovered the fatal flaw of many juicing ventures. Sourcing from particular farms year round means unpredictable yields and unpredictable flavors as seasonal changes manifest in the fruits. We know no two fruits are exactly alike. One lime may have a greener exterior to its neighbor on the same tree, but far less juice. While variety is the spice of life, we want your cocktails to consistently taste great, lime and lime again. Juicing whole fruits behind the bar introduces an unpredictable variable into the flavor of your cocktails. With carefully crafted recipes and talented bartenders working hard to produce amazing cocktails, we don’t think there is any room for flavor curveballs to ruin that delicate balance. That is why we maintain strict minimum standards of Brix sweetness levels and pH levels for all of our fruits. We accomplish this by sourcing based on quality throughout the year, depending on when the peak growing season hits, and by testing our fruits to make sure we bottle only the best. This means we can offer fruits that might have to take a break from other menu offerings, like fresh and juicy watermelon in December.

While we have implemented structures to maintain the flavor quality of our juices, we know consistency is the name of the game across the board. Squeezing fruits by hand is a gamble: the first lemon you slice open is likely to yield more juice out than the last squeeze you fumble through when your knuckles are sore and skin is dry from acid. With Twisted Alchemy, we guarantee our customers get reliable, managed juice yields. Wave goodbye to a whole lot of labor for a little amount of juice. All of our bottles contain a consistent 24.5 ounces of juice. Never again will bar managers have to worry about whether it took 20 or 40 lemons to complete their orders for the night.
