Every year, my wife Kim and I celebrate our joint May birthdays with an annual Cinco de Mayo fiesta at our house in Wilmette, Illinois. I’m usually in charge of acquiring the fresh lime juice for our Margaritas. I dislike the flavor of bad quality, store bought, heat pasteurized juices. So I have made an annual trek to my local, authentic Mexican restaurant—Depot Nuevo—for the past 10 years.
The “Depot” juices gallons of fresh lime juice by hand. I always wondered if that was the only solution for fresh lime juice. Why was it so necessary to juice on-site? Every night! Was there an alternative solution?
I happen to have some history in the craft food world having previously started Kim and Scott’s Gourmet Pretzels. I knew what went into working with inspired products that were innovative. I thought there might be a way to solve this juicy juicing problem with new Cold Pressed Juice Technology to preserve the fresh taste that is so important to delicious tasting hand-crafted cocktails.
So, I started traveling the country and the world to see how such a problem could be solved. I met with top mixologists in Paris, Chicago, California and New York. I made the journey to as many craft cocktail bars as I could and spoke to these true beverage artists to find out what it would take to guarantee fresh quality juice for every cocktail. And I wondered if I could actually improve the situation. With squeezing on-site, lime juice has to be thrown away after 24 hours! Such a shame!
I was on a mission – called by the alchemist’s spirit to find a solution. It took some time, but I finally found a way to help these artists fulfill their mission to bring great tasting, fresh handcrafted cocktails to the world.
