Lemon Bars with Twisted Alchemy Cold-Pressed Lemon Juice

Ingredients

For the Crust:

  • 1 cup (2 sticks or 226 g) unsalted butter, room temperature
  • ½ cup (100 g) granulated sugar
  • 2 cups (256 g) all-purpose flour

For the Filling:

  • 4 large eggs, room temperature
  • 1 ½ cups (300 g) granulated sugar
  • ¼ cup (32 g) all-purpose flour
  • ⅔ cup (160 ml) Twisted Alchemy Cold-Pressed Lemon Juice

Instructions

Crust:

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, mix the softened butter, flour, and sugar until well combined. Use a pastry cutter, fork, or your hands.
  3. Press the mixture evenly into the bottom of a 9×13 inch pan lined with parchment paper. Bake for 15-20 minutes or until firm and golden.

Filling:

  1. In a separate bowl, whisk together the sugar and flour. In another bowl, crack the eggs and whisk them before adding to the sugar-flour mixture.
  2. Pour in the Twisted Alchemy Lemon Juice and whisk until smooth.
  3. Pour the filling over the baked crust and return to the oven. Bake for an additional 20 minutes, uncovered.
  4. Let the bars cool completely in the fridge for at least 2 hours. Dust with confectioners’ sugar before slicing into squares.
