Why Twisted Alchemy?

It is as simple as our tagline. We press. You pour. Twisted Alchemy® provides the Hospitality Industry a true craft solution never before offered: hand-squeezed fresh, cold-pressed juice designed specifically for the Industry. If you are squeezing in-house, you are incurring labor costs, food safety liability, waste and varying prices—all of which Twisted Alchemy eliminates. You either choose shelf stable mixers that can sit on a shelf for who-knows-how long and sends your customers out the door with stomach pain. OR it’s the challenge behind managing and making fresh bar mixers in-house. Seasonal fruit variation, various skill and effort from staff, balance, consistency issues…the list goes on.

What is “HPP”?

High Pressure Processing is a cold pasteurization technique which consists of subjecting food, previously sealed in flexible and water-resistant packaging, to a high level of hydrostatic pressure (pressure transmitted by water) up to 600 MPa / 87,000 psi for a few seconds to a few minutes. To learn more about the HPP process, you can watch this video.

How does HPP work?

HPP is an external process. The raw, final product remains untouched.

Picture this: After the juice is bottled, the bottles are placed into a pressure chamber filled with cool water for approximately 60 to 120 seconds, where they are subjected to elevated pressures (the equivalent of being submerged 20 miles beneath the ocean floor) from all directions to the outside of the bottle, starving off oxygen that in turn inactivates harmful, pathogenic bacteria. without a loss of sensory of quality or nutritional value of our juices!

How is HPP different than “heat pasteurization”?

Other terms for traditional “heat” pasteurization you may see on labels such as “flash” or “gently pasteurized” refer to the use of thermal technology that essentially COOKS juice by exposing it to high temperatures in order to achieve microbial inactivation and, in doing so, also kills off vitamins, minerals and live enzymes. Twisted Alchemy does not and will not ever use heat pasteurization. By subjecting your favorite orange juice or kale mint celery smoothie to ultra-high pressures, pathogens, like salmonella, are given the 87,000-psi boot! Unlike thermal pasteurization that strips juice and beverages of their nutrients, enzymes, and probiotics, our pure cold-water process retains all the good stuff.

If it is HPP, what about the enzymes and the vitamins?

Twisted Alchemy has performed extensive independent research and outside testing in order to verify the effects of HPP on our juice. The comparative analysis of our juice before and after HPP validated that juices retained vitamins and kept enzymes intact.

My juice seems to have more pulp than usual. What's up?

-Due to the use of cold-pressed/HPP technology, our juices will occasionally face some natural coagulation that is caused by the extreme pressure that the juice is placed under during the process. The juice is perfectly fresh and delicious; when and if this happens, we’ve found that all the pulp can be dispersed with a simple agitation step.

-The solution is to vigorously agitate the juice using a blender, food processor or handheld immersion blender for about 60 seconds until extra pulp or solids break down. Doing this will result in a perfect, beautiful fresh juice for your cocktails.

Why does the color of my juice seem to vary at times?

Because our juice is made strictly from fruit, and nothing but, at times the color of the juice may vary due to the natural variety in color between different crops of grapefruits, oranges, etc. For instance, grapefruit juice made from ruby red grapefruits may appear slightly “redder.” We still control to ensure a consistent brix and pH level in each bottle, so while you may notice a slight difference in color, we hold the flavor to the same high standard from bottle to bottle.

How does Twisted Alchemy get fresh pressed citrus juice from the press to my bar?

We believe that fresh always delivers, so Twisted Alchemy is disrupting the supply chain and offers a Direct Ship option. We press. We ship. You pour. From our press to your bar. We ship anywhere in the Continental U.S. via UPS and FedEx.

I need my juice for a party, when should I order?

Due to the perishability of our product, we only ship Mondays and Tuesdays, generally. No deliveries on Saturday or Sunday. We have a 10-day lead time as a general rule but get orders out as quickly as possible. If you need your juice for a special event or specific date, we recommend ordering 14 days in advance to accommodate any shipping delays, holidays, etc. Please reach out to hello@twistedalchemy if you need to find out about expediting an order or planning for best order date.

How is it shipped?

Twisted Alchemy is shipped with a 100% recyclable liner and reusable, non-sweat gel packs to keep your juice deliciously cold and fresh. Our environmentally friendly coolers are packed with enough ice for 3 days of refrigeration. As summer heats up, we keep things cool and add the right amount of dry ice to each shipment. And always, we highly recommend refrigeration upon receipt.

How does the product come packaged?

Our cold pressed citrus juices are filled inside a clear 750ml polyethylene terephthalate (PET) plastic bottle (recyclable) and have 28mm tamper evident caps. The ergonomic neck is easy to handle and will handle a 28 mm speed pour. 

Why have we chosen to use PET plastic versus other packaging materials?

Because of the high pressure environment that our bottles are put under, we must use a rigid-enough material. 87,000 PSI of pressure precludes us from using glass, aluminum or paper, so we must currently use plastics. We have chosen PET plastic for his beneficial environmental and performance qualities. Here is more information.

Should I buy a 10 Liter BIB or 750ml bottles??

750ml bottles offer the convenience of ready to pour fresh juices. We use fully recyclable, PET, BPA-free bottles and look great behind the bar and in your back coolers. They are good for service through the best by date listed on the bottles. 

The 10-Liter Bag In Box (BIB) option comes in a flexible plastic tote with an easy to use thumb valve. They are generally about 10% less expensive than the bottles but are the exact same quality. They should be stored refrigerated and are designed to easily fill up your own vessel to be used in the bar. No oxygen will ever back up into the BIB which protects against any oxidation or potential contamination. 

Either option will deliver consistent quality, zero labor and 100% fresh squeezed juice yield.

What is the shelf life of your juices?

Our cold-pressed juices have a shelf life of up to 225 days from the time it undergoes high-pressure processing (HPP) during production.  Your juices will be delivered to your home or bar with at least 30 days of shelf life remaining on them (see the code printed on the bottle for best by date) and you have an additional 30 days beyond the printed date. As long as they are kept refrigerated,  this applies to both opened and unopened bottles. You may extend shelf life by 1 year if you wish to by freezing the juice. Enjoy!
