Nobody needs to tell an opening shift bartender about the drudgery of rifling through a fridge full of expired, discolored juices- or worse, of lugging a garbage bag full of heavy, wasted juice to the dumpster. But anyone who has cracked open one of Twisted Alchemy’s 100% Cold Pressed juices knows that when they open the fridge the next day (and the next day, and the next day...) it will be just as usable, just as delicious, and just as tantalizingly colorful. Although all of our juices are certainly graced by the alchemists’ touch, it is the power of High Pressure Processing that truly makes the magic happen.

High Pressure Processing (HPP) uses high pressure technology to extend the shelf life of juice without compromising its nutritional quality. Juice processed in this method is becoming increasingly popular due to its many benefits, including its ability to retain more vitamins and minerals than traditionally pasteurized juice. When our juices enter the HPP chamber, they are subjected to very high levels of pressure- up to 87,000 pounds per square inch. This process helps to eliminate harmful bacteria and other microorganisms while still maintaining the natural nutritional quality of the juice. By preventing the growth of bacteria which causes spoilage (and unhappy guests), this process also helps to extend the shelf life of the juice. 

Our High Pressure Processed juice retains more of its nutritional value than traditionally pasteurized juice because the high pressure used during processing does not alter the chemical structure of the juice or destroy any of its nutrients. As a result, our juices are a healthier alternative to traditionally pasteurized juice.

A rarely discussed but influential benefit we discovered during our exploration of this process was that HPP juice is less likely to cause allergic reactions. This is because the high pressure used during processing eliminates any potentially harmful bacteria or allergens that may be present in the juice. This makes HPP juice a safer option for those with food allergies or sensitivities.

All the hours spent juicing behind the bar are in service of creating delicious cocktails. When crafting our juices, we knew we could not sacrifice flavor. Our High Pressure Process preserves the natural flavor of juices, which is often eliminated during traditional pasteurization processes when juice is subject to high temperatures that can alter its delicious taste.
